I like the Main Floor (first floor) of the Hiawatha floor plan. But, I don't need a Loft (second floor) can I get a version without the loft (second floor)?
Yes. We can easily remove the loft, second floor, or a mezzanine. Thereby, converting the home to a ranch style home. (It may reduce the cost of the home as well.)
 
Can I make changes or customize the Hiawatha floor plan to add some features that I would like?

The Hiawatha does not show a basement. Can I get this home with a basement (lower level)?
Yes. Adding a basement is quite simple. And, the added benefit of adding a basement is that it increases your square footage with minimal cost. If you think about it, all you are doing is adding a little more to the foundation and a few support walls and you have nearly doubled the square footage.
